Cajun Oven Roasted Whole Portobello Mushroom And Yellow Squash

Today I took a little departure from my norm for my early afternoon meal. I usually eat all raw during the day and afternoon. I drink vegetable juice during the day and fruit smoothies during the afternoon, along with eating fruits or nuts. I took a little departure today and made cajun roasted whole portobello mushrooms and yellow squash and they tasted yummy.
Ingredients
- 3 – Whole Portobello Mushrooms
- 9 – 1/2 Inch Slices of Yellow Squash
- Olive Oil (Brush on front and back of mushrooms)
- Sea Salt (Sprinkle on)
- Cajun Spice (Sprinkle on)
Directions
- Step 1: Pull off the stem of the portobello mushroom and scoop out the fins with a spoon. Brush on olive oil on the front and back of the mushrooms. Sprinkle on salt and cajun spice to taste. I lightly covered the back and front of the mushroom with the seasonings.
- Step 2: Sprinkle olive oil , salt, and cajun spice on the yellow squash to taste. I lightly covered the front of the zucchini.
- Step 3: Turn oven on to broil. Once the oven is hot place in only the mushrooms in a pan for 10 minutes. After 10 minutes place 3 zucchini slices on the top of each mushroom and let them continue to cook for 10 minutes. After the full cooking time of 20 minutes has past, remove the mushroom dish, put mushrooms on a nice plate and have with a nice refreshing glass of water.
