The caramel color in food may be the most widely consumed food coloring helping to sell over a billion servings a day. The manufacturing of certain caramel coloring can lead to the formation of carcinogens like 4-methylimidazole. 4-methylimidazole has been found to cause cancer in mice and it is unclear if it causes cancer in humans.
California officially listed it as a carcinogen required warning labels on soft drinks. This requirement is only in California and if you buy a Coke in Washington D.C. it can have 5 times the amount allowed.
