Consuming vegetables is a great way to protect health, and the more vegetables you eat the more protection you will get.

Drinking whole food vegetable smoothies is also an excellent way to consume more vegetables than you would normally eat.

Blending vegetables into a juice has an advantage over eating them but it makes the nutrients in the vegetables more bioavailable.

Many of the nutrients in vegetables, like the carotenoid phytonutrients, are trapped within the plant’s cell walls.

When it is more difficult to break the plant’s cell walls and release the trapped nutrients, the nutrients are classified as having low bioavailability.

Chewing food very well breaks more of the cell walls, but because of many plant’s toughness and small size of their cells chewing leaves a lot of the cell walls intact and the nutrients they contain unattainable for digestion.

Blending on the other breaks a lot more of the plant’s cell walls and releases much more nutrients into the bloodstream.

So it is not only what you eat that will help protect your health, but it also matters how much of the food’s nutrients are bioavailable so the body can maximize nutrient absorption.

The health benefits of vegetable smoothies is also an excellent addition to a whole food plant-based diet, and what better plant foods are there to eat than the ones on the Dr Sebi food list?
